You’ll have to use the PC to interact with things, this is where a lot of people suggest a cheap Bluetooth keyboard with a track pad, or keyboard and mouse.
Assuming you’re using a modern TV, it functions just like a monitor for a computer. A mini PC is the same as a desktop/laptop, just in a little box. So basically you just plug the mini PC in with an HDMI to the TV, install the apps you need on the mini PC and you’re good to go

I’ve only used two nectar collectors, both from the Nectar Collector brand. One analog, one electronic. Definitely preferred the analog for the reasons you’re stating - the E rig just didn’t get hot enough to take those big dabs.
Cleaning doesn’t need to be a tedious task by any means, keep a bin of Q tips and ISO nearby to where you smoke and hit the tip with a bit after every hit. Quick ISO swab and then dry with the other end, the rest of the ISO gets evaporated when you heat it. Prefer titanium tips, as they’re less likely to crack from being heated while damp. YMMV but this is how I’ve kept my dab rigs and nectar collectors clean for a while now
